It’s garlic harvest time of year – and with it comes the delicious flowering buds at the top – the garlic scapes. You have to love garlic to love this – but it’s a delicious, immune boosting pesto variation that I enjoy annually!
To prepare put the following into a food processor:
15 garlic scapes
1/2 cup of pine nuts
1/4 cup parmesan cheese
1/4-1/2 cup olive oil depending on how creamy you like your pesto
Sea salt to taste (not much because parmesan is salty)
Process until smooth. Enjoy. This can also be frozen for later use.
