The Great "Scape" Pesto

garlic scapes

1/2

cup of pine nuts

1/4

cup parmesan cheese

1/4-1/2

cup olive oil depending on how creamy you like your pesto Sea salt to taste (not much because parmesan is salty)

It’s garlic harvest time of year – and with it comes the delicious flowering buds at the top – the garlic scapes. You have to love garlic to love this – but it’s a delicious, immune boosting pesto variation that I enjoy annually!

To prepare put the following into a food processor: 
15 garlic scapes
1/2 cup of pine nuts
1/4 cup parmesan cheese
1/4-1/2 cup olive oil depending on how creamy you like your pesto
Sea salt to taste (not much because parmesan is salty)

Process until smooth. Enjoy. This can also be frozen for later use.

Totally cracking up.Because I made this two nitghs ago.And lemme tell ya... the gluten-free pasta DOES NOT HOLD UP.And the pesto? With the exact same ingredients you just described? Awesome as long as you don't let your first-grader dump the entire package of pine nuts into the processor, and process the heck out of it for seven minutes until it is a pretty gummy pasty mess.Sorry.The chicken somewhat redeemed it - until my poor kiddo asked where chicken comes from.ARGH.So your post made me giggle :)
