Don’t worry if you have a thyroid problem – even though this contains raw cabbage it’s safe to eat – just keep it to no more than 1-2 times/week and enjoy as a side salad rather than a heaping plate of it. This salad does contain nightshades – you can remove the red pepper and pepper flakes if you avoid those and still enjoy this dish.
Prep Time 10 minutes minutes
- ½ medium red cabbage cored and shredded (I use my knife and cut it into fine ribbons)
- 1 large carrot grated
- 1/2 red bell pepper finely diced
- ¼ finely chopped small red onion
- ¼ cup chopped cilantro cut the stems off of the cilantro and chop to a fine cut
- Juice of ½ to 1 lime depending on how juicy the lime is and your taste preferences
- ¼ tsp Himalayan Salt or up to ½ teaspoon to your taste
- ¼ tsp cumin powder
- Optional: ½ small jalapeno pepper minced or a dash of red pepper flakes.
Use organic veggies whenever possible.
Serves 4 as a small side, or 2 as a main salad. Can easily be doubled.
