Ingredients
Lime Salmon
44-6 oz. pieces of salmon
3tbspolive oil
3tbspfresh lime juice
2tsplime zest
3clovesgarliccrushed
Salt and freshly ground black pepper to taste
Coconut Rice
3cupswater
1 1/2cupsricerinsed well
1/2cupfine shredded coconut
1/4tspsalt
Avocado-Mango Salsa
1large mangopeeled and diced
1large avocadodiced
3/4cupchopped red bell pepper
1/4cupchopped fresh cilantro
1/3cupchopped red onion
1tbspfresh lime juice
1tbspolive oil
Salt and pepper to taste
Instructions
Lime Salmon
In a baking dish mix together olive oil, lime zest, lime juice, garlic and season with salt and pepper to taste.
Place salmon in the dish, cover and marinate in the refrigerator for 15 – 20 minutes, then flip salmon to opposite side and allow to marinate 15 – 20 minutes longer.
Preheat the oven for baking at 400 degrees or preheat a grill.
Place salmon on a baking sheet (I use parchment paper for easier clean-up) and bake for 30-35 minutes to your liking.
Coconut Rice
In a medium saucepan bring rice, coconut, liquid, and salt to a full boil.
Cover and turn down to a simmer until liquid has been absorbed, 15-20 minutes.
Fluff with a fork, then let rest 5 minutes.
Put into a serving bowl
Avocado-Mango Salsa
In a medium bowl toss together all ingredients and serve as a side dish.

Time to Prepare: From start to finish, with marinating the salmon, you can whip off this whole meal in an hour. If you want to marinate the salmon for longer, add on the marinating time of your choice – up to 2 hours is plenty.Serves: The recipe serves 4, but is easy to adjust to your needs. Go ahead and make all of the Avocado-mango Salsa, though. It is so yummy you'll want to use it in a salad the next day, or even just eat it as a snack!
